Chorizo Mac & Cheese

Ingredients:

1 lb ground pork or beef

2 tbsp butter

1/3 – 1/2 jar of Hess Street Foods Chorizo Seasoning Paste

16 oz bag of large elbow pasta

8 oz queso blanco

4 cloves of garlic, minced

½ white onion, diced

2-3 roma tomatoes, diced

Mexican shredded cheese, for topping


How to do it:

Pre-heat oven to 350*F. Bring pot of water to boil and cook pasta as directed on package. While pasta cooks, bring an oven-safe skillet to medium heat. Add butter, then add in garlic and cook until fragrant.

Mix chorizo paste with meat, then add it to the skillet, use spatula to break up. Once meat is fully cooked, reduce heat to medium-low and add in onions and tomatoes. Cook until tomatoes are softened. 

Push meet to the side and add queso blanco to the pan, stirring all together as it melts. 

Add cooked pasta to skillet and stir well to ensure the pasta is fully coated in sauce. Once pasta is fully mixed in, cover with shredded cheese and transfer to oven. Bake until cheese is melted, about 5-10 minutes. Remove from oven and let cool, then serve!


Makes 4-6 servings.
