Tofu Chorizo w/ Sautéed Sweet Potatoes

Ingredients:
16 oz firm or extra firm Tofu
2 oz Hess Street Foods Chorizo Seasoning Concentrate
1 medium-large sweet potato
Olive Oil, to taste
½ cup diced red onions
¼ cup chopped cilantro
Salt & Pepper, to taste
How to do it:
Drain the Tofu package and add ¼ of Hess Street Chorizo Seasoning Concentrate.
Crumble the block of tofu with your fingers into the bowl with the seasoning, making sure all the tofu is evenly coated.
Add olive oil to a pan or skillet. Cook the seasoned crumbles in the skillet over medium-high heat, stirring often (about 10 minutes) until they darken.
Take the sweet potato and dice it. Sauté it in olive oil, adding salt & pepper to taste, until it’s golden.
Mix the sautéed sweet potatoes and chorizo tofu. Top with chopped red onions and cilantro.
