Tofu Chorizo with Sautéed Sweet Potatoes

A hearty, flavorful plant-based dish that’s perfect for tacos, bowls, or a satisfying meal on its own!

Ingredients:

  • 16 oz firm or extra-firm tofu
  • 2 oz Hess Street Foods Abuela's Original Chorizo Paste
  • 1 medium-large sweet potato, diced
  • Olive oil, to taste
  • ½ cup diced red onions
  • ¼ cup chopped cilantro
  • Salt & pepper, to taste

Instructions:

1️⃣ Prepare the Tofu Chorizo:

  • Drain the tofu and place it in a bowl.
  • Add ¼ of the Hess Street Foods Abuela's Original Chorizo Paste and crumble the tofu with your hands, ensuring it’s evenly coated.

2️⃣ Cook the Tofu Chorizo:

  • Heat a skillet over medium-high heat and add a drizzle of olive oil.
  • Add the seasoned tofu crumbles and cook for about 10 minutes, stirring often, until they darken and become slightly crispy.

3️⃣ Sauté the Sweet Potatoes:

  • In a separate pan, heat a little olive oil over medium heat.
  • Add the diced sweet potatoes, season with salt and pepper, and sauté until golden and tender.

4️⃣ Assemble & Serve:

  • Mix the sautéed sweet potatoes with the tofu chorizo.
  • Top with diced red onions and fresh cilantro.
