Tofu Chorizo with Sautéed Sweet Potatoes

This vegan chorizo recipe is full of bold flavor and comforting texture — made with Hess Street Foods Abuela’s Original Chorizo Paste, crispy tofu, and sautéed sweet potatoes. Whether you're building tacos, filling a burrito bowl, or enjoying it on its own, this dish brings satisfying flavor without the meat.
You can crumble or cube the tofu, depending on your preferred texture.


Ingredients:

  • 1 block of firm or extra-firm tofu (drained and pressed)
  • ¼ jar of Hess Street Foods Abuela’s Original Chorizo Paste
  • 1–2 tablespoons olive oil (for cooking tofu and sweet potatoes)
  • 1–2 medium sweet potatoes, diced
  • Salt and pepper, to taste
  • Optional toppings:
    • Diced red onion
    • Fresh cilantro or baby spinach

Instructions:

1. Make the Tofu Chorizo

Drain the tofu and gently press out excess moisture. You can crumble it with your hands for a ground-style texture, or cut it into small cubes for a meatier bite.
Place tofu in a mixing bowl and add ¼ jar of Hess Street Foods Chorizo Paste. Toss gently until tofu is fully coated.

2. Cook the Tofu

Heat a nonstick or cast iron skillet over medium-high heat with a drizzle of olive oil.
Add the seasoned tofu and cook for about 10 minutes, flipping or stirring occasionally until browned and slightly crispy on the edges.

3. Sauté the Sweet Potatoes

In a separate pan, heat olive oil over medium heat. Add diced sweet potatoes and season with salt and pepper.
Sauté until golden and fork-tender (about 12–15 minutes), stirring occasionally.

4. Combine & Serve

Mix the sautéed sweet potatoes into the cooked tofu chorizo.
Top with diced red onions and fresh cilantro or baby spinach.
Serve as a plant-based taco filling, over rice or quinoa bowls, or enjoy on its own as a hearty vegan main dish.
