Ingredients:
- 1 lb ground meat (beef, pork, or turkey)
- ½ jar Hess Street Foods Chorizo Seasoning Paste
- 1 tbsp oil
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 cup ricotta cheese
- 1 can (4 oz) chopped green chilies
- 4 tbsp chopped fresh cilantro, divided
- 12 small corn or flour tortillas
- 1 cup shredded Cheddar cheese
How to Make It:
1. Preheat your oven to 375°F.
2. In a large bowl, mix the ground meat with ½ jar of Hess Street Foods Chorizo Seasoning Paste until evenly combined.
3. In a large skillet, heat the oil over medium heat. Add the chorizo-meat mixture and cook until browned and slightly crispy, stirring often.
4. Stir in the diced tomatoes and tomato sauce. Bring to a boil, then reduce heat and simmer for 2 minutes. Remove from heat.
5. In a small bowl, combine the ricotta cheese, green chilies, and 2 tablespoons of the chopped cilantro. Mix until smooth.
6. In a 12x8-inch baking dish, assemble the layers:
- Spread a thin layer of the chorizo mixture on the bottom of the dish (to prevent sticking).
- Add 6 tortillas in an even layer to cover the bottom.
- Spread half of the remaining chorizo mixture over the tortillas.
- Spoon and spread the ricotta mixture evenly over the chorizo.
- Add the remaining 6 tortillas on top.
- Spread the rest of the chorizo mixture over the tortillas.
- Sprinkle with shredded Cheddar cheese and the remaining 2 tablespoons of cilantro.
7. Bake for 25 minutes, or until heated through and the cheese is bubbly and melted.
8. Serve hot, garnished with more cilantro, a dollop of sour cream or crema agria, or sliced avocado—whatever your heart desires!
