 Ingredients:

  • 1 can of tuna, drained
  • 1–2 tbsp Hess Street Foods Spanish Chorizo Paste (adjust to taste)
  • 2 tbsp Greek yogurt
  • ¼ cup chopped green olives
  • 2 tbsp chopped parsley
  • 1 package of store-bought pie crust (or empanada dough)
  • 1 egg (for egg wash)

Instructions:

1. Prepare the Filling

In a mixing bowl, combine the drained tuna, chorizo paste, Greek yogurt, and parsley. Stir until smooth, then fold in the chopped green olives for a salty, briny bite.

2. Assemble the Empanadas

Roll out the pie crust and cut into 3–4 inch circles.
Place a spoonful of filling in the center of each circle.
Fold over into a half-moon shape and press the edges with a fork to seal. For extra crispness, chill for 10 minutes before baking.

3. Bake

Preheat oven to 375°F (190°C).
Brush each empanada with beaten egg to give them a golden finish.
Bake for 25–30 minutes, or until golden brown and flaky.
