The Origin: Hess Street, 1955

In 1955, Abuela Licha moved from Saltillo, Coahuila to San Antonio, Texas, where she settled on Hess Street. In her new home, she turned to cooking as a way to stay connected to her traditions and culture. Her iconic chorizo quickly became a family favorite—made the same way it had been for generations, passed from mother to daughter. Through it, she carried forward a sense of home, keeping memory, heritage, and family alive in every meal.

Abuela's Way

Abuela Licha’s chorizo began with the careful preparation of dried ancho peppers, fresh garlic, and a blend of four simple spices. Slowly, she would bring everything together, blending it into a smooth, fragrant paste. That base was then mixed into ground pork, carefully seasoned until fully combined. From there, she would fill natural hog casings, forming each link by hand before hanging them to dry.

Opening one of our jars is an invitation into Abuela Licha’s kitchen—filled with the most incredible aromas and the same rich, traditional flavor she once made by hand.

decision to launch

We created this to solve a simple problem: chorizo made with clean, natural ingredients and real homemade flavor was missing from everyday kitchens. We believe good food should be simple, honest, and made without compromise—so we brought Abuela Licha’s tradition into a form that works for how people cook today.

2024 Winner!

HEB Quest for Texas Best

We decided to enter the H-E-B Quest for Texas Best 2024 competition, a statewide program celebrating emerging food brands across Texas. Out of more than 500 participants, Hess Street Foods was awarded First Prize.

That win opened the door to something bigger—bringing our products to H-E-B shelves across more than 150 stores in Texas, and introducing our chorizo pastes to kitchens throughout the state.
